Oude Kaap Reserve Collection Sauvignon Blanc 2020
Grapes are sourced from diverse pockets of vineyards across the Western Cape, which is reflected in the wine's wide spectrum of flavours. Harvesting takes place at optimal ripeness and early in the morning to preserve the crisp varietal aromas and flavours.
At the cellar, the individual batches of grapes are quality sorted and crushed. After settling of the juice, cold fermentation takes place at 14 degrees Celsius for 3 weeks. The dry fermented wine is then racked off of the primary lees, but stays on the fine lees for 5 months to enhance body and mouth-feel.
A light-bodied dry white wine with bracing fruit flavours that refresh the palate and end with a delicate aftertaste.
Best served well chilled as an aperitif or with fresh oysters, grilled prawns, pan-seared calamari, herbed chicken salads or smoked salmon starters.
