The premium Chardonnay and Pinot Noir grapes used for this wine is harvested early at lower sugar levels to retain the natural freshness required for a premium Cap Classique base. Grapes are hand-picked in the cool mornings and placed in small lug boxes for gentle handling in transportation to the cellar. Only free-run juice from whole bunch pressing is fermented, and extended lees contact over 12 months intensifies the flavour complexity post fermentation. The wine has a gorgeous pale gold colour with fine bubbles and an enticing lemon cream aroma. Almond biscotti and zesty citrus notes play on the palate through to a mouth-watering, lingering finish. The result as a beautiful balance of fruit purity and biscuit flavours.
