George Bishop London Dry Gin

Distilled on a traditional copper pot still in a London Dry style with nothing other than pure Kentish water added to the distillate from the still, this juniper forward gin has a distinct flavour profile from the 15 botanicals used. A blend of finest juniper, including Italian, Bosnian and Macedonian berries, combined with coriander provides the backbone of a bold, fresh pine and woody spice core. It is complemented by warm Mediterranean peels including sweet orange, bitter orange and lemon, accentuated with a slight sweetness from caraway and star anise. Delicate spice from telicherry pepper, Idukki cardamom together with cinnamon provide an interesting and lingering finish. There is a soft floral and earthy quality from ambrette seed, angelica root and English camomile. In all, a well-balanced but complex spirit equally at home in cocktails as well as served with a premium tonic. Smooth enough to enjoy neat, this gin makes the perfect martini. The spirit is conditioned and polished at different alcohol strengths in vessels for many weeks to enhance its smoothness and character before bottling.
